Most parents dread the packing lunch part about back to school, me included as I actually have a picky eater. But as she had been trying new food this summer, the arrival of the Snapware Total Solution to our home really got me excited about meal prepping for her school lunch.

It is literally only 3 more weeks and it's already back to school for us. I don't know what happened to the other two months of summer break, it zoomed by so fast. I have 3 things to prepare for before school starts - What to pack for the kids for lunch, making sure the upcoming first-grader learns more words and lastly, to prepare the clingy toddler for preschool. More like her and me as it's like we're glued to each other all day. Separation anxiety will ensue for sure. LOL.


Usually big sis would bring hot meals to school. But there are days when we are in such a rush and there's no time for me to heat things that it would really be better if I pack cold meals that I can prepare the night before. One of the easiest thing to make is our chicken pineapple sandwich. Check the recipe below. I promised it's really yummy. I grew up with it, my mom makes them all the time.


Chicken Pineapple Sandwich Recipe:

  • 1 Chicken Breast, cubed
  • 1 can Pineapple Crushed, drained
  • 1/2 cup Mayonaisse
  • Pinch of Salt & Pepper to Taste
  • 2 White or Wheat Bread
Just mix the ingredients together and they fit perfectly on the rectangle Snapware that was part of the Snapware Total Solution On the Go 12-Piece Plastic Value Pack set. I put a good amount on the bread and it's ready.
